Cattle slaughter and beef consumption are barely mentioned in the literature on Chinese economic, food, or animal history. This is possibly due to the widely held popular and scholarly assumption that beef was avoided and even considered taboo in the daily diet of Chinese people in premodern times. This article investigates the tangible regulation and practice of cattle slaughter in Qing China—the period when the beef taboo was argued to be formally subsumed into Chinese morality. I ask the following questions: To what extent did the Qing state ban cattle slaughter? How was the ban enforced in the localities? Did Chinese people slaughter cattle for consumption? Were there lawful beef markets in Qing China proper? How did increasing beef-eating Western sojourners since the mid-19th century impact this sector? Accordingly, I demonstrate that with the leeway provided by the state, the cattle slaughter industry developed in many regions of China proper, especially large cities. In this sector, Chinese Muslim merchants played a dominant role, even though the Han merchants could outnumber them. Their efforts have prepared the state and Chinese merchants to better cope with new circumstances since the mid-19th century. Broadly, this paper sheds light on how different religious, ethnic, and national groups affected the economy and the practice of law in the Qing dynasty.  相似文献

Two single bovine burials and one mixed animal burial (containing bovine and canid skeletal remains) have been unearthed at two Baden culture sites, Aljmaš‐Podunavlje and Osijek‐Retfala located in Eastern Croatia. Zooarchaeological analysis attributed the faunal remains to domesticated cattle (Bos taurus) and in one case a dog (Canis familiaris). Almost complete and articulated skeletons of subadult or adult cows were found in all three examined features, while pit 59/60 from Aljmaš also contained a skull belonging to an adult‐domesticated cattle and a skeleton of a very young dog, 2–3 months old. All of the skeletons are well preserved and display no evidence of carcass processing indicating that the animals were buried intentionally. Consideration of the positions in which these animals were interred and their relationship with nearby deposits enables discussion of potential animal burial strategies and possible connections with certain ritual practices in which cows and in one case a dog played important roles. Although the aetiology of bone pathologies in cattle is poorly documented, various deformations in the skeleton have been attributed to draught exploitation in the archaeozoological literature. This paper summarizes the results of an osteological study that was undertaken on the feet of modern draught oxen. This led to the definition of a series of draught‐related anomalies. In an attempt to describe the pathologies in a more consistent and quantitative way, a scoring scale for each individual bone pathology was established. The developed method is applied to cattle remains from four Roman and one late medieval site. The distribution of the observed pathological indices (PIs) on the first phalanges is interpreted in terms of the age structure of the cattle populations, and the possible modes of cattle exploitation and meat consumption in various settlement types. Abstract

Bercy is a prehistoric village sited by the Seine river (Paris, France), whose main period of occupation was dated to the very beginning of the 4th millennium BC. The animal subsistence economy relied heavily on cattle husbandry, complemented by other species including sheep. Cattle and sheep isotopic history (δ13C, δ18O) was investigated at the seasonal scale, through sequential sampling in tooth enamel, providing new insights into seasonality of birth and diet. Sheep were lambing in mid-spring, only slightly later than expected from what is observed nowadays in temperate Europe at similar latitude. Cattle were born over a period spanning approximately six months, which was an unexpected result compared with a two to three months calving period in free-ranging cattle populations. The extension of the calving period might have been related to seasonal food supplementation. Some cattle and some sheep fed on a 13C-depleted resource in winter, potentially leafy fodder. A direct consequence of an extended calving period would be the availability of cow milk, which would have covered the whole year at Bercy. This is important information in a context where the exploitation of cattle milk by the human community was highly suspected from the demographic management of the herd.  相似文献

Animal skins from human burials, dated 2nd and 3rd millenium BC, including haired skin bags lined with cloth, provided evidence of ox, goat and sheep, the cloth being made of plant fibre, possibly flax. Two thirds of the skin samples had evidence of vegetable tanning. Of 18 samples of livestock hair or skin 61% were from cattle with the remainder being about equally shared between goats and sheep. The hair diameter distributions indicated that all had been killed in late summer. Only two colours, black and white, were presented in each livestock species. That the sheep were of hair type accords with the use of plant fibre in the cloth, and is in keeping with the later appearance of fleeced sheep in the Egyptian New Kingdom.  相似文献

Despite the antiquity of domestic cattle in the Sahara-Sahel, archaeological evidence from two sub-Saharan regions indicates that the first pastoralist colonization of sub-Saharan Africa may not have proceeded so smoothly as modern appearances suggest. The first appearance of cattle-based economies seems to have been delayed by as much as a thousand years after the first appearance of small stock, in both eastern and southern Africa. This article reviews the relevant archaeological evidence and argues that the lag in successful introduction of cattle stems from new animal diseases encountered by pastoral colonists entering biogeographic zones south of the Sahel. Diseases that are often fatal to cattle, including wildebeest-derived malignant catarrhal fever (WD-MCF), East Coast fever (ECF), foot-and-mouth disease (FMD), and Rift Valley fever (RVF), as well as trypanosomiasis, are described as probable barriers to the early entry of cattle-based economies into these regions.Malgré l'antiquité des animaux domestiques dans le Sahara-Sahel, les données archéologique de deux régions subsahariennes indiquent que les premières colonisations pastoraux des zones au sud du Sahel ne se propagèrent pas aussi promptement que suggèrent les apparences actuelles. En l'Afrique orientale et en l'Afrique du sud, l'apparition d'économies basées sur l'élevage des gros bovins paraît être retardée de quelque mille ans par rapport à l'apparition des petits ruminants domestiques dans ces mêmes régions. L'article recense les données archéologiques pertinentes et propose que le délai de l'introduction effective des gros bovins fût causée par des nouvelles maladies vétérinaires rencontrées par les premiers colonisateurs pastoraux entrant dans les zones biogéographiques au sud du Sahel. Des maladies fréquemment fatales aux gros bovins, telle que le coryza gangreneux, la thèleriose, la fièvre aphteuse, l'arbovirus des Bunyaviridae, aussi bien que la trypanosomiase, sont proposées comme des obstacles probables à la diffusion des économies à gros bovins dans ces régions.  相似文献

Abstract

Zooarchaeological analysis of a substantial assemblage of animal bones excavated from Dudley Castle, West Midlands, revealed two significant changes in cattle management in the late medieval and post-medieval periods: a statistically significant increase in size in the later 14th century; and a gradual reduction in slaughter age. To explore whether these altered husbandry practices were accompanied by modifications to the diet and environment of these animals, a targeted study of carbon and nitrogen stable isotope values from 135 cattle bones was conducted. This analysis revealed that δ13C and δ15N values were broadly consistent between the mid-13th and mid-18th centuries. Only two statistically significant diachronic variations were identified: a temporary decrease in δ13C values in phase 7 (1397–1533); and lower variation in δ13C values in phase 9 (1647–1750). A number of explanations for these changes are offered. While the zooarchaeologically attested shifts in cattle husbandry were not accompanied by isotopically detectable changes to diet and environment, the analysis of stable isotopes highlighted other changes that were not detected using traditional zooarchaeological analysis. The complimentary benefits of zooarchaeological and isotopic approaches are extolled.  相似文献

The North‐Western Mediterranean witnessed a rapid expansion of farmers and their livestock during the Early Neolithic period. Depending on the region, cattle played a more or less important role in these communities; however how these animals were exploited for their milk is not clear. Here we investigate calf mortality to determine indirectly whether cattle dairying was practised by Early Neolithic stock herders. Age‐at‐death (AtD) frequencies for calves from two sites: Trasano (Italy, Impressa culture: 7–6th millennium BC) and La Draga (Spain, Cardial culture: 6th millennium BC) were estimated from dental eruption and development stages, and measurements of un‐fused post‐cranial material. Adult age classes are well represented in the dental AtD frequencies and were interpreted as the result of the slaughter of prime beef and retired lactating females. For calves aged less than 12 months, there was no statistical difference in the AtD frequencies based on dental and post‐cranial material indicating that the data is a good representation of the mortality patterns of calves, either natural or deliberate. At both sites there was a strong mortality peak at 3–6 months in all AtD profiles. At La Draga, this peak was clearly differentiated from a peak at 0–1 month, which can be interpreted neonatal mortality possible a consequence of the birthing season coinciding with the end of winter during more humid climatic conditions that at present. The deliberate slaughter peak around 3–6 months is discussed, and we propose that stock herders controlled the mortality of infant classes, possibly in response to variable external environment pressures while maintaining animal productivity.
