This article is a study of the writings on food, cooking, and dining by the eighteenth-century poet, essayist, and gourmet Yuan Mei (1716–98) as found in his recipe book Suiyuan shidan. Starting with an overview of the organization and content of Suiyuan shidan, the article offers an analysis of Yuan Mei’s cultural attitudes reflected there and in his works in other genres. The value underlying Suiyuan shidan exemplifies Yuan’s personal response to the Chinese intellectual environment at the end of the eighteenth century. Building a connection between the recipe book and Yuan Mei’s controversial reputation in the literati community, the article explores the changing meaning of culture in eighteenth-century China and Yuan’s way of surviving the intense competition for voice and influence among the cultural elites of the time.  相似文献

采用典型人物访谈和结构方程模型相结合的研究方法,试图解析旅游目的地饮食原真性再造及其机制问题。研究发现:第一,原真性再造过程并非改变地方饮食文化的原真内核,对原真性可塑部分的剥离、重构与外力助推是非传统食物短时间内成为地方饮食文化代表的关键。融合外来基因并能最终存活下来的原真性,更有可能成为地方饮食文化代表。第二,食物是旅游地特色餐厅的关注重点,服务原真性对游客感知影响最大,食物原真性对游客满意度影响最大。餐厅环境并无显著影响。第三,游客在原真性再造的循环过程中起到了承上启下的作用。原真性感知悖论要求地方和游客贯序调整各自内在文化建构偏差。游客意识最终决定旅游目的地饮食文化再造的存在价值。  相似文献

This paper reviews theoretical and empirical approaches drawn from influential journal articles and books on sustainability policy published over the last 10 years (2007 through 2017). Due to the widespread application of sustainability as a concept and space limitations, the paper more narrowly focuses on sustainability research in three critical policy areas: climate change, urban development, and agroecology and food systems. Drawing from information provided primarily by citation indexes, the study identifies and analyzes the research literature related to sustainability in these three fields. Future theoretical and empirical research approaches that can better integrate and connect the current diffuse and incongruent literature on sustainability are discussed in the paper. The findings of the literature review generate a number of possible future research directions that are discussed in the study.  相似文献

Inference regarding the impact of urban areas on health is limited by cross‐sectional studies assessing few dimensions and ignoring area‐level socio‐economic status. This study simultaneously assessed several dimensions of the built environment against incident cardiometabolic risk (CMR) arising over 10 years. It tested the hypothesis that, accounting for local area relative wealth, features of the built environment would not predict incident CMR. Initially, disease‐free adults in a biomedical cohort in Adelaide, Australia, provided address and clinical data over three waves of follow‐up. CMR was defined as the count of five clinical CMR factors. Built environment measures were derived for urban form, and natural, and food environments. Local area wealth was expressed using the relative location factor index. Poisson growth models accounting for within‐suburb clustering, age, sex, and education were used to estimate associations between built environment measures and increasing CMR. Fitted linear trajectories had statistically significant mean values of intercepts and slopes. CMR trajectories were associated with age, male sex, and low education. In models including measures of the food, natural, and urban form environments, per standard deviation increase, only POS count predicted incident CMR, which was more strongly predicted by relative location factor. Not accounting for local area socio‐economic status may overestimate the strength of relationships between health and the built environment. Inequity in accessible POS is robustly related to incident CMR.  相似文献

In the early 1970s, there was scarcity in the world grain market, soaring prices and famines in several countries of Asia and Africa. The commercial grain trade was expanded at the expense of food aid. After a brief look at policies addressing the situation in terms of modernised methods of agricultural production for small producers, the article sketches how such policies also affected relief efforts, from the low availability for food aid, the provision of food that was not useful and late deliveries through efforts to tie food aid to local changes in agricultural production and settlement patterns. In part, food aid thus reinforced processes of social differentiation that had contributed to causing the famines in the first place.  相似文献

There has been a proliferation in the use of the concept of prefiguration to describe and understand many of the protest and social change movements of the past decade. However, there are key aspects of the concept that remain unexplored. In this paper I consider telos and justice, and unveil a temporal paradox arising from the thinking behind prefiguration. Rather than this temporal paradox of prefiguration being the undoing of the concept, it does in fact have the potential to be its strength. The purpose of this paper is to assert, by drawing on Derrida’s notion of the impossibility of justice, that the temporal paradox of prefiguration is not something to be resolved but instead is to be foregrounded and navigated. I use research from a food sovereignty collective in the north of Spain to offer an illustration of a prefigurative economic politics that embraces Derrida’s justice-as-an-impossibility.  相似文献

ABSTRACT

This article compares the development of specialty food in Denmark, Norway and Sweden using a number of quantitative indicators as well as a qualitative analysis of government policy. The analysis shows that specialty food has increased in importance in all three countries over the last twenty years, but there are important differences in the kind of specialty food that has developed and the nature of government intervention and governance structures. Overall, Sweden appears to have the largest production of specialty food and drink and is particularly strong in organic production and consumption, farm processing and farm shops. Norway has a large number of products with protected origin and also leads in the number of farmers’ markets. Denmark lags behind the other countries on most indicators, but has witnessed the fastest growth in microbreweries over the last five years. Theoretically, the article challenges the ‘negative’ definition of specialty food as ‘non-industrial’ or ‘alternative’, and suggests a more nuanced approach. Empirically, it points towards the possible existence of a ‘Scandinavian model’ of specialty food governance with extensive interaction between central government, local government and private firms to stimulate the growth of specialty food.  相似文献
