The importance of the spice trade to commercial development in Europe in the later middle ages has long been recognized, although the reasons for the demand for exotic condiments from the East have not been much considered. There seems little evidence to support the idea that spices were used either to mask the taste of rotting or “vulgar” food or as preservatives. There are sources, however, which do provide a basis for the unriddling of the taste for spices. Contained within the recipes of the period is evidence that the style of cooking was adopted from the Arabs, and that the heavy use of spices was but one of a cluster of characteristics of Arab food replicated in Europe. In order to establish the similarities between European and Arabic medieval cookery, a sample of French, Italian, Spanish, Flemish, English, and German texts is drawn upon and compared with the main features of the several Arabic works which have been translated into Spanish, French and English. Underlying the upheaval in the cooking of the élite in Europe from about 1300 was a changed attitude toward eating which was stimulated by the place of food in Moslem theology as represented in depictions of the Garden of Delights, a concept which is explored in its rather wide currency in Europe. I postulate that, intrigued with the sensual pleasures of eating as portrayed in the Garden, Europe began to associate luxurious dining with the food of the Arabs, and thus the passage of what was a strange and alien cuisine was facilitated.  相似文献

Remains of anadromous Pacific salmon and trout (genus Oncorhynchus) are common in archaeological sites from California to Alaska; however, morphological similarity generally precludes species identification, limiting the range of questions that salmonid remains can address in relation to past human use and ongoing efforts in conservation biology. We developed a relatively simple, rapid, and non-destructive way to classify salmon and trout vertebrae from archaeological contexts to species using length, height and the ratio of length to height. Modern reference material was obtained from all seven anadromous Oncorhynchus species native to the west coast of North America. A minimum of ten adult Chinook (Oncorhynchus tshawytscha), chum (Oncorhynchus keta), coho (Oncorhynchus kisutch), pink (Oncorhynchus gorbuscha), and sockeye salmon (Oncorhynchus nerka) and cutthroat (Oncorhynchus clarki clarki) and steelhead trout (Oncorhynchus mykiss) were skeletonized and vertebra length and height were measured. Morphometric analyses compared species classification success based on Linear Discriminant Analysis (LDA), Classification and Regression Trees (CART), and randomForest, with CART performing the best. Classification analyses used all seven species individually, but because of considerable overlap among several species we also conducted analyses on four species groupings. We assigned Chinook salmon and cutthroat to their own groups based on their dissimilarities from each other and the other species. The remaining species were divided into two group complexes (a) chum, coho, and steelhead; and (b) pink and sockeye. When we grouped species according to similar morphology, CART overall success rates increased, ranging from 92 to 100%. Individual species with the highest successful classification rates using CART were Chinook salmon and cutthroat, from 92 to 100%, respectively. We applied our classification to an assemblage of ancient (1000–3000 year old) salmonid vertebrae from the Swiftwater Rockshelters excavations on the upper Wenatchee River in Washington State, U.S.A.  相似文献

This paper examines ethno‐symbolic and instrumental explanations of ethnic and sectarian identities placed within the constructivist turn in the study of political identity, both in the abstract and how they have been deployed to explain the increasing contemporary influence of ethnosectarian mobilisation in Iraq and the wider Middle East. The paper identifies explanatory value in these approaches but finds their focus on either ideational structures or individual rationality too narrow to provide a comprehensive explanation of what happened to political identities in Iraq after 2003. Instead, the paper deploys what can be termed a ‘Bourdieusian method’, in an attempt to get beyond the polarities of structure and agency. It uses Bourdieu's conceptions of political field, principles of vision and division and symbolic violence to understand the influence that de‐Ba'athification, the creation of the Muhasasa Ta'ifia or sectarian apportionment system and national elections had on political identities in Iraq since the 2003 invasion.  相似文献

The transition to settled farming communities in northern Europe was a far more gradual process than elsewhere in Europe: this makes it possible to study the transition to farming archaeologically at a finer level of resolution. In this paper we trace the shift to cultivation in two areas: Denmark and Finland. Despite the difference in the time scale of agricultural evolution, and despite other chronological and environmental differences, we can, in both cases, isolate three distinct stages in the transition to fanning, thus extending the process well beyond the conventional date for the shift to cultivation. Both the case studies emphasize the long continuation of foraging adaptations, and the long delay before the appearance of a predominantly agricultural economy. This delay has been caused by the development of successful maritime adaptations, which acted as a viable alternative to farming until a specific trigger—a decline in marine resources—occurred and initiated the substitution phase of the transition.  相似文献

The purpose of this short article is to put on record the archaeological observations made between 1990 and 2002 during the decade of stonework conservation on the northern run of the frieze panels on the west front of Lincoln Cathedral. It is not concerned with the frieze sculpture itself but with its stones and the spaces behind the stones. Equally, this article is not an assessment of the sculpture and its dating but is an archaeological investigation which potentially has wider implications for the sequence of construction and carving of the Romanesque frieze now visible at Lincoln.  相似文献
