中国饮食:多元文化的表征--第八届中国饮食文化学术研讨会综述

一位人类学家曾说过：了解文化,舌头是最直接的捷径。这句话形象地表达了“饮食”之于人类的重要性。在从10迄今的种种人类行为中,“吃”始终是最重要、最基本而最“有滋有味”的活动;它始于人类基于“果腹”需求的生存本能,又涉及生产、储存、交换等社会活动,还引发礼节、仪式、禁忌等文化现象。因此,“饮食文化”如同探入人世百态的望远镜,当我们通过这种永恒而普遍的行为去透视不同时代、不同地域的人群时,将可以瞥见差异表象下隐藏的深层文化制度,瞥见绵绵不绝的变迁历史以及人类层出不穷的智慧。
